Simple and tasty – this is the rule in Portuguese cuisine. Today I share with you the recipe for Cod fish with crispy “broa” on top. Delicious!
- 4 pieces of desalted cod
- 500 gr of corn bread
- few garlic cloves
- olive oil
1) Boil a pan of water and add the cod. Be patient and let it cook on low heat. In another pan place sliced onions and olive oil, keep on medium heat for 15 minutes until onions are cooked. Turn the oven to 180 º C.
2) Pass the drained cod to the pan of onions. Leave browning. Remove the crumb of bread, cut into small cubes and crumble into a bowl. Add the garlic and olive oil. Mix everything until it forms a paste.
3) In a baking dish place the cod and pour the rest of the preparation. On top, place the folder of bread, snuggling and pressing slightly to form a crust. Bake for 20 minutes. Garnish with coriander sauce and serve.
